Baked Sweet Potatoes with West African-Style Peanut Sauce
I made this recipe for dinner on Sunday. We had some friends over for dinner. The only alteration I made in the original recipe was to omit the red pepper (so it would be more kid-friendly). Here is a link to the recipe.
One of said friends testifies to yumminess of this dish. Couple of questions, Shauna: Did you use spaghetti sauce? What kind of peanut butter did you use (natural/Skippy type)? Did you use fresh ginger?

Beka: a mother/Registered Nurse/marathoner who has plenty of great tips about health and exercise, along with yummy recipes. She is also an accomplished photographer.
Erika: an actor/hair stylist who has a gift for cooking and is interested in creating delicious, healthy food. She is also musically gifted, and has recently added knitting and sewing to her list of can-dos.
Lara: a mother/teacher/poet/novelist/I could go on all day...who can create delicious food out of thin air. She is interested in eating locally and committed to teaching others about the importance of sustainable eating.
Shelby: a mother/certified speech pathologist who cooks delicious meals and makes her own babyfood. Also has her own etsy shop and is extremely craft-gifted.
Shelly: a mother/mathematician who has great recipes for food and kitchen cosmetics. She got me (shauna) started down the path of less toxic living. Also very manually gifted.
